More Automobile Maintenance ….

I was ready to get the eye-sore road salt washed off the car. I had gotten out when the snow covered roads finally became passable and a dark colored car really collects and shows the road salt. So, my quarters for the car was were lined up and ready. I was eager for the morning excursion. Though not yet suffering from Cabin Fever, I was looking forward to maybe even a few photo opps during this outing.  Well you would know it … the bottom fell out of the temperature gage during the night and it snowed for two days. Wintertime in Kentucky. Oh well, just in case … the quarters are still waiting, as I am still waiting … and wondering … then the weather starts to look good again … AND IT SNOWS AGAIN with, of course, the accompanying deluge of road salt applied to the roadway … what ever happened to a cooperative Winter Season?

Baked/Fried Hamburger Steak W/Garlic Mashed Potatoes

Friday Dinner Menu

Once the White Onion is sliced and the Hamburger meat prepared (salt-pepper), two Fresh Garlic Cloves are mashed and chopped (diced). 

The chopped Garlic is sauteed in Real Butter. Remove from heat before the Butter burns since this is the basting mixture for the Hamburger Steaks and Garlic Potatoes.

Seared on each side in a hot frying pan, the Hamburger Steaks are put into a 400 degree oven for thirty-five minutes. Note: excess grease is faithfully drained from the frying pan.

Halfway through the cooking process, the Hamburger Steaks are generously basted with the melted Garlic-Butter mixture. This keeps the Meat from having a hard or crusty exterior which could be problematic should dinner guests have missing or no teeth.

While the Hamburger Steaks are baking, the White Onion slices are sauteed in Real Butter until mostly translucent or before the Real Butter burns. The leftover butter is added to the Garlic basting mixture.

Plated with the Sauteed Onions on the Hamburger Steak and the Mashed Potatoes liberally basted with the Onion/Garlic and Melted Butter mixture. Note: the Mashed Potatoes were leftover from a previous meal. They warmed up magnificently!

The taste of this dinner was quite good. The Garlic Mashed Potatoes were exceptional and not overpowering in the least. Note: for a juicer Hamburger Steak oven cooking time should be reduced by ten minutes.

The finisher … No Sugar Added Pumpkin Pie. And … not only a No Sugar Added Pumpkin Pie … but a Gift (free) No Sugar Added Pumpkin Pie! (got to love the Holidays)

Fried & Baked Pork Tenderloin W/Boiled Cabbage

The Menu .. and the first four burner going at the same time along with the small oven meal in quite a while.

Breaded Pork Tenderloin is browned on both sides … I usually place my Tenderloin in a plastic bag of flour and let it sit in the refrigerator a couple of hours before cooking.  

Browned lightly … the Tenderloin is placed in a 400 degree oven for twenty minutes. For thinner cuts of meat, I reduce the baking time by five minutes …

With the Tenderloin in the oven, I turn my attention to the Hoe Cakes or fried Cornbread consisting of Cornbread batter which I added a good measure of Frozen Whole Sweet Yellow Corn & four packages of Artificial Sweetener (instead of 1/2 cup of processed white sugar per package directions for sweet cornbread) … The Yellow Corn added to the mixture gave the Hoe Cakes a different texture which I found was quite pleasing …

Hoe Cakes kept warm and ready for the table … I made them somewhat larger than normal so they would fit neatly between the fingers & thumb and wouldn’t be dropped as much as the smaller more delicate versions. (hate it when that happens)

Leftover Boiled Cabbage with Ham Seasoning heated up quickly …..

Slow cooked White Beans seasoned with Ham Pieces were a perfect complement to the meal … The beans were soaked and occasionally washed the night before cooking.

Plated … Fresh chopped White Onion was added to the White Beans and an ample serving of Real Butter applied to the first Hoe Cake. The Pork Tenderloin was served with Homemade brown Gravy.

I always cook with two meat servings. This makes it easier in packaging or freezing the remnants of this meal or any other meal for future consumption or possible disposal out back.

Automobile Maintenance …

Working on the car isn’t always pretty … or convenient … or image enhancing, but at times it is necessary. Finally for me, the temperature was over freezing and it had stopped raining. Driving an old large car without power steering is much like driving a later model tank which also doesn’t have power steering. I knew from the Owners Manual where the power steering fluid reservoir was located, but a preliminary inspection presented a problem concerning access. I couldn’t get my arms, much less my fingers, anywhere near the fluid fill cap and the contorting gymnastic movements were giving me deep muscle cramps that lingered on and on. I had thought it over during several cold rainy days of maintenance preparation and came up with a hopeful solution … and it worked. Lying on top of the engine gave me the angles to remove the reservoir cap, insert a long snoot funnel and replace the missing fluid. The next trick was to get back on the ground without an excess of cuts, scrapes, additional missing appendages, engine damage or mangled clothing.
