Fried & Baked Pork Tenderloin W/Boiled Cabbage

The Menu .. and the first four burner going at the same time along with the small oven meal in quite a while.

Breaded Pork Tenderloin is browned on both sides … I usually place my Tenderloin in a plastic bag of flour and let it sit in the refrigerator a couple of hours before cooking.  

Browned lightly … the Tenderloin is placed in a 400 degree oven for twenty minutes. For thinner cuts of meat, I reduce the baking time by five minutes …

With the Tenderloin in the oven, I turn my attention to the Hoe Cakes or fried Cornbread consisting of Cornbread batter which I added a good measure of Frozen Whole Sweet Yellow Corn & four packages of Artificial Sweetener (instead of 1/2 cup of processed white sugar per package directions for sweet cornbread) … The Yellow Corn added to the mixture gave the Hoe Cakes a different texture which I found was quite pleasing …

Hoe Cakes kept warm and ready for the table … I made them somewhat larger than normal so they would fit neatly between the fingers & thumb and wouldn’t be dropped as much as the smaller more delicate versions. (hate it when that happens)

Leftover Boiled Cabbage with Ham Seasoning heated up quickly …..

Slow cooked White Beans seasoned with Ham Pieces were a perfect complement to the meal … The beans were soaked and occasionally washed the night before cooking.

Plated … Fresh chopped White Onion was added to the White Beans and an ample serving of Real Butter applied to the first Hoe Cake. The Pork Tenderloin was served with Homemade brown Gravy.

I always cook with two meat servings. This makes it easier in packaging or freezing the remnants of this meal or any other meal for future consumption or possible disposal out back.

Automobile Maintenance …

Working on the car isn’t always pretty … or convenient … or image enhancing, but at times it is necessary. Finally for me, the temperature was over freezing and it had stopped raining. Driving an old large car without power steering is much like driving a later model tank which also doesn’t have power steering. I knew from the Owners Manual where the power steering fluid reservoir was located, but a preliminary inspection presented a problem concerning access. I couldn’t get my arms, much less my fingers, anywhere near the fluid fill cap and the contorting gymnastic movements were giving me deep muscle cramps that lingered on and on. I had thought it over during several cold rainy days of maintenance preparation and came up with a hopeful solution … and it worked. Lying on top of the engine gave me the angles to remove the reservoir cap, insert a long snoot funnel and replace the missing fluid. The next trick was to get back on the ground without an excess of cuts, scrapes, additional missing appendages, engine damage or mangled clothing.

I am ready for the Spring. Old Guys don’t do well in the cold, and I really miss the warm nights, cool mornings and sitting in the porch swing pitching peanuts to the Blue Jays. Spring might not be around the corner, but that doesn’t keep me from hopefully peeking out the blinds every once in a while. Oh come sweet Spring … (I have peanuts)

Calico Omelette W/Sausage Breakfast

Morning Menu.

Red, Yellow, Green, & Orange Bell Peppers make up the Calico Omelette mixture. I cut and chop the peppers in advance and freeze them in a plastic freezer bag. This is a time saving convenience. The same mixture is used in my Calico Rice recipe. A first step cooked Pork Sausage is cut up and added to the peppers. 

Chopped White Onion is added to the Pepper and Pork Sausage mixture. I generally saute the colorful mixture in real butter and leftover sausage grease until the Peppers and White Onion pieces are soft and nearly translucent.  Note: I use a lot of paper towels when cooking. It is alright to remove any frying pan from the heat temporarily in order to keep flaming paper towel and soot out of the menu item. 

The Onion, Pepper and Sausage mix is removed from the pan. Before I add the Scrambled Egg mixture, Salt and Black Pepper, I let the pan get back up to temperature. The two Scrambled Egg mixture is perfect for a nine-and-a-half inch square pan and makes a nice Thin Omelette. I use the square frying pan because I like ninety degree angles and straight lines. The square pan also makes plating tender dishes like the thin Calico Omelette easier.

The cooked Calico pepper and sausage mix is then carefully placed in a corner of the square pan. I like to fold the left and right corners toward the center. This is done to keep the tender Omelette from tearing apart during plating. Note: before folding corners, Cheese can be added if required.

The top corner of the Omelette is then folded down leaving room for the Pepper and Sausage mixture to make a colorful presentation.

Easily plated and ready for breakfast. An additional Pork Sausage, Coffee and well done Toast complete the morning meal.

A morning presentation that is neat, clean and flavorful. Note: only one paper towel was severely fire damaged during the preparation of this meal.
