The Old Guy … Back To The Unfinished Manuscript …

When working on the forgotten and “unfinished” book manuscript, it can be a challenge when the Laptop is consistently occupied by the help (Kat). Put away in 2006, the manuscript was found during a basement cleanup in 2018. With no efile for working or reference, the pages have to be re-entered into a computer for editing and possibly future publishing. The re-writing and creative writing progress often can be measured by the amount of help I receive.

Yep lazy bones … time to get to work …

Whoa … PRESSING keys with your NOSE is still PRESSING KEYS …

Yeah … that innocent look … I might believe it if I didn’t see that look forty time a day.

After a long day at the keyboard it’s time for a break!

The Old Guy … Crankin’ Back The Years …

Crankin’ Back

Behind the Cat Box, potted plant and the side of the couch is the old Victrola. Taking off the oil lamps, I opened it up and after cranking the handle, had the old Ambassador Model from the Ambassador Phonograph Company of Chicago ready to play. 

With no speakers or electronics, both cabinet doors open maximizes the sound output.

The last 78 I played years ago was on the turntable. It was the song “Shrimp Boats”. (shrimp boats is’ah comin’ there’s dancin’ tonight) It sounded great.

Looking into my collection of  78’s, I found a recording of President Franklin D. Roosevelt on December 8th 1941 addressing congress, and declaring War on the Empire Of Japan. 

Addressing the events that happened on The Day of Infamy, December 7th, 1941, the recording is a somber reminder of that historic day.

The Old Guy … Cooking Something Different … Cabbage Rolls …

Reaching Beyond Turkey Bacon Series

After enduring so many mornings of turkey bacon … finally a meal to be savored …

Gathering the ingredients … I use fresh Onion, Cabbage, Celery, Red, Green, Yellow, and Orange Bell Peppers. I also used half a pound of Pork Sausage and three-quarters of a pound of ground beef. Meat combinations are optional.

The chopped ingredients are added to the mix of pork sausage, Italian Bread Crumbs and hamburger. The Italian bread crumbs were used as a binder instead of an egg since the pork wanted to remain segregated from the hamburger but stick to everything else. The binder got everything mixed together.

The last mixing step … bread crumbs with additional Pasta sauce added ….

A well steamed Cabbage leaf is rolled carefully with the ends tucked in for a nice neat veggie/meat cylinder. Thinning the main vein with a sharp knife is mandatory so the leaf will be supple enough to roll up without tearing apart.

Rolled and ready for the Pasta Sauce …

Pasta sauce is poured where everyone is smothered and covered … and baked at three hundred-seventy-five degrees for an hour and twenty minutes. For this recipe, I would suggest steaming the cabbage leafs until floppy done so the rolls won’t be a little on the tough side.

Plated with Steamed Vegetables covered and mixed with Calico Rice. A cheese topping can be optional. 

This was one Grand meal that I enjoyed. The veggies and rice enhanced the cabbage roll. Thankfully, there were leftovers enough for two more meals. Note: Sweet Corn on the cob (not shown) served as a side dish but was marvelous.

The Old Guy … Cooking Something Different … Breakfast … With Buttered Bacon …

My last diagnostic blood test showed I had to make several dietary changes to get my triglycerides down … drastically. So for the past month, I have had NO pork sausage with my morning oatmeal or eggs or biscuits or waffles or just as a late evening snack food. It has been nerve testing. So when I bought some turkey bacon on sale, I thought I had another avenue to a good tasting breakfast. Cousin Gene even gave me a few pointers on how to cook the stuff even though its appearance was unimpressive to say the least. Turns out, the smell of it was unimpressive along with the texture and taste. But I found that I could salvage my breakfast with eggs if I took a stick of real butter and applied it generously to each piece of faux bacon. I broke two pieces into my eggs where they would disguise some or the leather shoe taste and used the remaining two buttered pieces to have with my hot buttered once frozen store bought biscuits. And I still have a package minus only four pieces left. Maybe my oatmeal will make the faux bacon palatable, but I can almost be sure it’s true when I say as a late night snack … turkey bacon cannot stand alone … even if you heavily rub it down with real butter and have store bought high-impact plastic teeth to chew it.
